We start with cultivated and wild harvested agave, hand selected for their maturity and high sugar content. We then roast the agave in an open air pit, releasing the fermentable sugars. The agave is then crushed using the "tahona de piedre". The crushed agave is then placed n open wood vats for fermantation to take place, usually lasting 3-4 days. That liquid is then placed in our copper pot stills, and distilled twice to reach the desired proof.
